Party Puff Cookies

I found so many of these recipes online and really wanted to try them out- After playing around with them a little, this is how I made mine. The kids loved them and I found a cookie that I can change around from party to party.

Party Puff Cookies

Cookies -
Butter (softened)
1/4 C. Vegetable Shortening
3/4 C. Granulated Sugar
4 Eggs
3 C. All-purpose Flour
5 tsp. Baking Powder
1/2 tsp Salt
2 tsp. Vanilla Extract
Icing-
2 C. Confectioners' Sugar
2-4 Tbsp. Milk
You can add one of the next 2 ingredients if you'd like to try a cocoa or strawberry icing.
2 Tbsp Cocoa powder
1 Tbsp dry strawberry Jello gelatin

Preparation Instructions

COOKIES

Melt butter and shortening together. Add the sugar; mix well.

Add the eggs, one at a time, beating well after each addition, mix in the vanilla extract.

Whisk together flour, baking powder and salt. Add to creamed mixture slowly. The dough tends to be a little sticky so just sprinkle with flour until it's soft and workable. Roll dough into small balls -they do puff up a little so remember not to make them too big.

Put cookie puffs on ungreased cookie sheets and bake them at 375* for 8-10 minutes until the bottoms start to brown a bit ( the cookies shouldn't be brown though) . Transfer cookies to wire rack and cool completely before icing.

ICING

Mix milk gradually into confectioners’ sugar to a thick consistency, you want it to be spreadable (kinda) but not runny. You can add cocoa or dry jello at this point for other flavors.
I dunked the top of each cooled cookie into icing. Set back on wire racks. Add your sprinkles now, while icing is still wet. I did a batch at a time so the icing wouldn't set.

Makes a lot of cookies, depending on how large you roll them. I just rolled the dough into 1-inch balls. I got about 30 cookies from one batch, it just depends on how big you roll them. I loved them - not too sweet, almost like a tea cookie. I think I will try them in a couple of different ways, maybe add some chocolate to the dough next time...maybe nuts. This is a fun dough that you can probably change around to fit your mood.
