Raspberry Vanilla Pavlova


You know when I took up the sugar-free, low fat challenge I really thought it would be easy to find recipes that were good in looks and in flavor. Well..lo and behold it definitely has been a challenge.
This is my second post for something light. It's a simple recipe for a classy dessert.


Raspberry Vanilla Pavlova

4 egg whites
1/4 tsp cream of tartar
1 c granulated sugar

1 (1oz) pkg Jello Instant sugar-free pudding mix
1 c thawed Cool Whip (sugar-free/fat-free)
2 c fresh raspberries (or favorite fruit)
2 Tbsp powdered sugar

Heat oven to 225*. Beat egg whites and cream of tartar on high speed, for about 5 minutes or until SOFT peaks form. Add granulated sugar 1 Tbsp at a time until STIFF peaks form . Using a decorating bag on parchment covered sheet, pipe a 10" circle. (You can also just spread it with a spoon into your shape) Make sure sides are a little taller to hold your filling in.
Bake for 1 hour and 30 min. Leave in oven with door ajar and cool completely.
Meanwhile make your sugar-free pudding according to package ( I used directions for pie filling on side of package). Stir in thawed Cool Whip. Cover and refrigerate for 15 min.
Place cool meringue on your serving plate, fill center with pudding mix. Top with your fresh fruit and sprinkle on your powdered sugar.

This was so simple and I loved how it turned out. A real show stopper! It was sweet, light and so pretty!

Love pavolvas -- but did learn the hard way not to make it on a rainy day -- I ended up with marshmallow instead of a perfect meringue -- yours does look perfect!

This looks fabulous. I saw Jamie Oliver do a pavlova...it had some kind of fruit, nuts, and drizzled chocolate. omg, sounds so good!

You are right about the challenging part--My husband is a diabetic and I struggle to find desserts for him. This is beautiful. I like to make individual ones also!
