Lemon Ice-Box Pie

I came across this recipe a couple of weeks ago and didn't copy where I found it. If you've seen it let me know. It was called a "Lemon Frugal Cheesecake". Ok...I'm interested. Well this one was super easy and tasty but it was more of a ice box lemon flavored pie. More of a pudding texture than a cheesecake. It was smooth and lemony and add berries... it was good AND this recipe makes 2 pies. Can't get any more frugal than that. Make it the night before you need it. I am taking mine over to Dad's today.  :)


2 graham cracker crust (make yourself or buy ready made)
1 pkg cream cheese (room temp)
1 c sugar
1 12oz can evaporated milk (chilled-make sure you chill it)
1 tsp vanilla extract
1 (3oz) box Lemon Jello
1 c boiling water

Dissolve Jello in boiling water and stir until smooth. Let the Jello come down to room temperature. When your Jello has cooled down pour it into blender (yeah it says blender), add chilled milk, vanilla, sugar and cream cheese. Blend until smooth and pour into 2 graham cracker crusts. It will be watery but refrigerate it for at least 6 hours or overnight. It will set and be silky, light and a nice change from the real heavy thick cheesecake we are use to having.
