Mocha Kahlua Cupcakes


Made these for my baby sister - yes she's over 21. They were rich and decadant! There is some serious mocha kahlua flavor going on here. Smells like Starbucks in this kitchen!





Preheat oven to 325*
3 Tbsp instant coffee grauales
2 Tbsp boiling water
4 eggs
3/4 C buttermilk
1/2 C plus 2 Tbsp Kahlua, divided
3 Tbsp canola oil
2 tsp vanilla extract
1 1/2 C flour
3/4 C sugar
2/3 C baking cocoa
1/2 C packed brown sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon

In small bowl,dissolve coffee granules in boiling water. In large mixing bowl, beat eggs, buttermilk, 1/2 c Kahlua, oil, vanilla and coffee mix until well blended. Combine your dry ingredients and gradually add them to egg mixture. Mix until completely blended.
Line tins with paper liners for cupcakes, fill and bake for 20 minutes.
With toothpick poke about 6 holes in each cupcake and brush with Kahlua/coffee mix. Cool completely.
*You can also use a boxed cake mix ( I've tried Duncan Hines Dark Choc Fudge, for the record and it's just as good.)

Frosting:
1 (8oz) mascarpone cheese at room temp
2 Tbsp evaporated milk
1 tsp vanilla extract
2 c confectioners sugar
1 Tbsp baking cocoa
2 tsp instant coffee
2 tsp Kahlua

In medium bowl beat cheese with evaporated milk until smooth. Dissolve coffee granules in Kahlua. Mix milk and coffee mixes with the rest of frosting ingredients and beat until fluffy. Frost cupcakes and let set. Dust with sugar /cocoa mix- just a Tbsp of each mixed well, then sprinkled over each cupcake. I also added a pink sugar button because I can't leave well enough alone. :) Feel free to leave it out.

GREAT!!! recipe. I have made a cake with Kahlua, but a like cupcakes better. I always make cupcakes for the family. Geri

I love that the frosting has marscapone cheese, interesting
