Twisted Cherry Swirls!


Okay I will tell you up front, you want me to be honest right? This is an easy recipe and they should look like a swirled cookie but...I goofed!! I put dough in freezer instead of refrigerator to chill!! (That's what happens when you are trying to bake and pick up kids at the same time) Oh well.. they are not picture perfect (as you can see) but they were still so, so, good. I will make them again with a different filling AND a CHILLED dough :)



1/2 c butter
1 c sugar
1 egg
1 tsp vanilla
2 c flour
1 tsp baking powder
1/4 tsp salt
3/4 c cherry jam (or jam of your choice)
1/2 c chopped nuts (opt)
1/2 c coconut (opt)


Cream butter until smooth, then beat in sugar. Add your egg and the vanilla. In another bowl combine flour, baking powder and salt. Add to your creamed mixture, beating well. Shape dough into ball and wrap in plastic wrap, chill for 2 hours in refrigerator.
While the dough is chilling, combine cherries and nuts and coconut ( I used cherry and coconut on half and plain cherry on the other).
On floured surface, roll dough into a 12x9 rectangle (the dough will be sticky so keep sprinkling with flour).
Roll jellyroll style and wrap in plastic - chill another hour.
Slice and bake on greased cookie sheet at 375* for 8-10 minutes.
