Ok this one does take some time but I really wanted to make them. Hubby is taking them to work in the morning so I won't have to start jogging now! They are sinful and finger licking. If you like eggnog, you will like these.
Cake
1 yellow cake mix
2 eggs
1 1/2 c eggnog
1/4 c butter,melted
1/2 tsp nutmeg
1/2 tsp rum extract
Preheat oven to 350*
Combine cake mix, eggs, eggnog, melted butter, nutmeg and rum extract in large bowl. Beat for 4 minutes until smooth. Your batter will be thick like a shake. Pour into lined cupcake tins and bake for 18-22 min -mine were done at 16 minutes. Don't let them over bake, they will be very light in color so keep checking on them. When wooden toothpick comes out clean they are done.
Filling
5 Tbsp flour
1/4 c eggnog
1 c softened butter
3/4 c sugar
1 tsp vanilla
1/4 tsp nutmeg
Combine flour and small amount of eggnog in pan. Stir until smooth (you are stirring like it's gravy, no lumps). Next, add the rest of the eggnog and bring to a boil. Don't stop stirring. Cook and stir for about 2 minutes. Take off heat and let cool completely. Cream your butter and sugar, add vanilla extract and nutmeg. Gradually beat in to eggnog mix.
Cut out small hole in tops of cupcakes and pipe in filling - set them aside until ready to frost.
Frosting
2 oz white chocolate, melted
3 c confections sugar (can add a little more to stiffen it up if you want)
1/8 tsp nutmeg
3 Tbsp butter, softened
2 Tbsp whipping cream
2-3 Tbsp hot water
Melt chocolate and set aside. Mix chocolate, sugar, and nutmeg. Beat in butter and cream, add water until frosting drizzles slightly, spread on cooled cupcakes.
I sprinkled a little nutmeg over each cupcake.
