Pancake Poppers


I asked for this pancake pan from Williams and Sonoma for Christmas and I couldn't wait to try it today!

  This pan makes light puffy pancakes that can be made with fruit, cheese, chocolate or jam. Served for breakfast , hor d' oeuvres, even a light supper with a salad. I started with something simple - Blueberry Muffin mix. Mix according to your package directions, add teaspoon of batter and cook for about 2-3 minutes and flip and cook another 2-3 minutes.I sprinkled mine with a little powdered sugar. There you have it - quick breakfast to go. 

Next I tried a regular pancake mix and just jazzed it up a bit with s+p, onion powder, garlic, blended cheese, chopped onions and peppers. You could add cooked chicken, peas and poultry spice for a little chicken bun. Add pasta sauce and pepperoni and cheese and have an Italian puff, the variations are endless.


I am sure a muffin pan would work in a pinch, just keep an eye on them so they don't burn. Remember to spray them with butter or cooking spray.
This pancake pan is well coated so the pancakes just ease out with a wooden skewer. I love it!

My mother bought this last year to make for my nephews who were 3 and 2 at the time. my sister was in the hospital for a few days having her now 1 yr old. My mother made these for the other two boys at home each morning. they loved the surprise that Grandma had put in their breakfast.
She has since given it to me and my husband and I made them when my sister, BIL and 6 yr old niece were staying with us this summer. She loved the surprise in the middle too.
