Taco Potato Soup

This soup doesn't really have a name, I will figure one out though. Call it what you want..taco soup,mexican potato soup..whatever you like. You will love it.




1 lb ground turkey
2 large potatoes (diced into chunks)
1 large box of chicken stock
1 c hot water
1 can mexican diced tomatoes
1 can corn (with liquid)
1 can pinto beans
1 envelope of Taco seasoning
salt & pepper to taste
2 c hot cooked rice
tortilla chips
shredded mexican mix cheese

Pour chicken stock into pot, add chopped up potatoes,diced tomatoes,water, and taco seasoning.Cook on medium heat. Meanwhile brown turkey and drain. Add to your pot when potatoes are about tender. Cook until everything is blended and cooked through, add corn with liquid,beans, and cooked rice. Serve in a bowl with shredded cheese and crushed tortilla chips, even avocado if you have it. It's easy, quick and perfect for these cold nights we are about to have.
