Champagne Cupcakes!

Don't these look just like a crisp bubbly New Year?






2 3/4 c flour
3 tsp baking powder
1 tsp salt
2/3 c butter
1 1/2 c sugar
3/4 c champagne
6 egg whites
Preheat oven to 350* Line cupcake tins with paper liners. In a large bowl cream together butter and sugar until very light and fluffy. Sift flour, baking powder, and salt together, and then blend into creamed mixture alternating with champagne. In a large clean bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into batter to lighten it, then fold in remaining egg whites. Pour into cupcake liners. Bake at 350 for about 25 minutes until golden around edges and a little firm to touch.


Frosting
2 sticks unsalted butter, firm but not cold
1/8 tsp salt
3 1/2 c confectioners' sugar, sifted
1/2 tsp vanilla extract
1 tsp champagne
2 drops of red food coloring
edible glitter
In bowl beat butter and salt on medium speed until light and fluffy - about 2 minutes. Reduce speed to low and gradually add confectioners' sugar and beat until incorporated. Add vanilla and champagne and beat until smooth and creamy. Do not overmix, it should be creamy and dense.
