Hot Cocoa Cupcakes

Baby it's cold outside!!


Well it is cold and we are expecting a winter blast in the next day.... all I am thinking is W.A.R.M.... Get the oven on, get the kitchen cozy. The kids are back at school today so I thought this would be a nice way for them to end their first day back. They do "LOOK" warm don't they?

1 pk devil's food cake mix
2 c mini marshmallows, divided
4 (1oz) square semi-sweet chocolate (coarsely chopped)
1/4 c milk
1 (8oz) Cool Whip (thawed)
1 tbsp unsweetened cocoa
Back cake according to directions, while waiting make your "frosting". Start by placing 1 cup of marshmallows, the chocolate chunks and milk in the saucepan; cook on low until marshmallows and chocolate are completely melted and mixture is well blended. Cool at least 30 minutes. Gently stir in whipped topping. Frost cooled cupcakes with whipped cream topping mixture, top with remaining 1 cup of marshmallows. Sprinkle with cocoa. Cover and refrigerate until ready to serve. Makes 12 cupcakes
