Mexican Chocolate Sheet Cake


I haven't made this cake in years but I love it for a crowd. I'm doing Super Bowl with Dad so I thought I'd make it and take it over. This is a great cake normally but when you add cinnamon and pepper. Wow! It makes it unforgettable! It's just enough to make it unusually perfect!


Spray a 13"x9"x2" baking pan and bake @350º for about 20min.
Cake:
2c flour
2c sugar
2 sticks butter
1 tsp cinnamon
1 tsp cayenne pepper
1 tsp baking soda
1/4 tsp salt
1/3 c unsweetened cocoa powder
1 tsp vanilla
2 eggs (beaten)
1/2 c buttermilk
1 c boiling water

Frosting:
1 3/4 sticks of butter
4 tbsp cocoa powder
6 tbsp buttermilk
1 tsp vanilla
3 1/2 c powdered sugar

Mix flour, sugar, cinnamon, cayenne pepper and salt together - set aside. In saucepan, melt 2 sticks of butter. Add your cocoa powder. Stir to blend. Next, add boiling water and keep boiling for about a minute. Take off heat and pour into your flour mixture and stir slowly to incorporate.
In clean bowl mix 1/2 c buttermilk and 2 beaten eggs, baking soda and vanilla. Stir buttermilk into hot butter mix -blend well. Pour mixture into sheet cake pan. Bake at 350º for about 20 minutes until toothpick test comes out clean.

While waiting on your cake to bake, make your icing. Melt 1 3/4 sticks of butter in a saucepan and add 4 tbsp of cocoa powder -mix completely and remove from heat. Add buttermilk,vanilla and powdered sugar. Stir until smooth and pour over warm cake, spread evenly over cake. Let cool to let "icing" set.

Just baked it in a 13"x9"x2" baking pan, and iced it there too. Cuts out nicely.
