Strawberry Cream Cheese Cupcakes


I don't understand why I can't make a cupcake without filling it? I love filling cupcakes..weird I know. Oh well,this one came together pretty easily and  I think everyone liked them. They had such a sweet and fresh flavor...umm like a ...strawberry. :) Really, smells good too. Let me know if you try them out.
Strawberry Cake:
1 white or yellow cake mix


1 (4 serving size) strawberry jello mix
4 eggs,lightly beaten
1 c oil
1/4 c fresh strawberries, sliced and mashed




Filling:
5 cups confectioners’ sugar
2 tsp. vanilla extract
2 sticks of unsalted butter; softened
1 cup of pureed strawberries

To make filling: Puree strawberries in a food processor until smooth (about 15 seconds); set aside. Cream together the butter, confectioner’s sugar, and vanilla. Then add the pureed strawberries. Combine until smooth. The filling should be fairly thick. Add more sugar if the mixture is too thin.


Strawberry Cream Cheese Frosting*
1 stick butter, room temperature
1 block (8oz) cream cheese, room temperature
1 1/3 cup powdered sugar
1/4 cup strawberry jam

Beat butter on medium-low speed until smooth and creamy
Add cream cheese and beat on medium-low speed until smooth and creamy (30 seconds-1 minute)
Sift powdered sugar over creamed mixture and beat on medium low until the sugar is all incorporated 
Add jam and continue beating.
Make sure you don't overbeat or else the frosting will become soupy. Mine was a little thinner than I wanted but I still managed some little swirls.
* You can always use a can of Cream Cheese Frosting, just add a tablespoon or so of strawberry jam.
