As much as I love cupcakes I just couldn't pass this up! I saw this a couple of months ago and knew I would have to make it. Having three kids in the house, I am always looking for a new way to serve something old. These little muffins were perfect! Just like a loaded baked potato but kid sized. You could make a batch ahead of time and serve them at your next party!
3 russet potatoes
mixed shredded cheddar cheese
2 tbsp milk
1/3 c sour cream
1/2 sm chopped onion
2 tsp butter
salt
pepper
1 1/2 tsp Worcestershire sauce
4 slices of cooked bacon (until crumbly)
Preheat oven to 375º
Fry up your bacon until crispy and done - set it aside to drain on a paper towel. In the same pan add butter and saute onions. Make your potatoes like you like them, some bake them; I just chopped them up and skillet fried them until they were done and golden. When potatoes have cooled down, mash them up a little and add cheese, milk, worcestershire and sour cream. Stir to blend. Fold in onions and bacon. Taste and season to your liking.
Spray your muffin pan with cooking spray and fill tins evenly with potato mixture. Top with extra cheese. Bake in oven for 20-30 minutes until golden brown. Serve with a dollop of sour cream on the side.
