Sprite Cupcakes for St. Patrick's Day!


Looking for simple recipes to let the girls try out, I came across this simple recipe, it was so good. It was sweet and moist - perfect for cupcakes. I added green food coloring for a St Patty's theme. This recipe was a keeper in my book, I hope you try it out.



1 white cake mix
4 eggs
3/4 cup vegetable oil
1 box instant vanilla pudding (3 oz. size)
8 oz. can of Sprite (the small ones)
Preheat oven to 350 degrees.
Line tins for cupcakes. Mix ingredients on low until combined and then increase speed to medium and mix for about 2 minutes until completely blended. Pour batter into prepared muffin tins and bake for about 18 minutes or until a toothpick inserted comes out clean. 


Buttercream Frosting
1 cup (2 sticks) butter, softened
1 tsp vanilla extract
1 1b powdered sugar
1-3 tsp milk or heavy cream
Using a mixer, cream softened butter and vanilla  until smooth. Slowly add sugar, let butter and sugar mix together before adding more. If you want it a little creamier, add a teaspoon of milk at a time and beat on high until you get the texture you want. Add food coloring for the color you want.
