Strawberry Bread Pudding



My dear hubby went grocery shopping this weekend and bought a coffee cake from the bakery that no one ate...I didn't want to throw it out so... I decided to try to turn it into something.This was a pretty simple bread pudding recipe. Using the strawberry coffeecake, I made this easy bread pudding. I just added 1/2 c of fresh sliced berries to the mix. You know I have to find "summer" wherever I can.


1/3 cup sugar
4  cups day-old bread cubes (I used store bought strawberry coffee cake)
3 eggs
1 1/2 cups milk
1/2 tsp. vanilla extract
1/2 c sliced strawberries (or other fruit)
1/3 c condensed milk (optional)


 Heat oven to 350°F. Spread bread cubes in greased 9" square baking pan. Tuck sliced strawberries between pieces of bread.
Whisk together eggs, milk, sugar and extract. Gently pour over bread cubes, pressing custard down into bread with back of spoon.
Bake 30-40 minutes, until knife inserted near center comes out clean.
 
Cut yourself a  slice, drizzle with condensed milk and add a strawberry for garnish.
       Enjoy!
