Pancake Muffins!

Found these over at TK, made them my own and am passing them on. Made some for the girls this morning and they fought over the last one. They taste like chocolate chip muffins but as soon as I added syrup they became pancakes for sure! Wow! I will be making these for a girl scout trip next weekend - perfect for their breakfast on the go (or even a late night snack). They were really good.


1 c flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp sugar
2/3 c buttermilk
1 whole egg
1 tsp vanilla extract
2 Tbsp maple syrup
2 Tbsp melted butter
1/2 c chocolate chips

Preheat oven to 350º and generously grease a mini muffin pan. Combine flour, baking powder, baking soda, salt, cinnamon, and sugar in medium bowl. Sift together with a wire whisk. In another bowl stir buttermilk, egg, maple syrup, vanilla, and melted butter until combined. Add wet ingredients and stir until combined.
Stir in chocolate chips and keep a few to sprinkle on top (toss them in a little flour so they don't sink to the bottom).
Bake 8-9 minutes until they are golden. Serve with hot pancake syrup.
