Banana Fo Fanna Bars

I'm always looking for something fun and decided to play with a banana bread bar idea. I wanted a little layered kinda thing and this is what I came up with. Banana Fo Fanna Bar......yeah you know the words.


Cookie Crumb Layer
1 1/2 c finely crushed cookies (I used Nilla wafers and Oreo's)
4 tbsp melted butter
1/2 tsp cinnamon
Preheat oven to 350º and spray 13x9" pan with cooking spray
In a bowl combine cookie crumbs, butter and cinnamon. Press into 13x9" baking dish. I baked mine for about 5 minutes. Set aside to cool down. Set aside about 1/3 c for topping.

Banana Bread Layer
1 1/2 stick of butter
2/3 c sugar
2 eggs
1 3/4 c flour
1 tsp vanilla
3 medium mashed bananas
2 tsp baking powder
1/2 tsp salt
1c choc chips
In mixing bowl, beat butter on medium speed until softened. Pour sugar in and beat until creamy. Add eggs and vanilla, beat well. Stir in your mashed bananas.
In separate bowl whisk flour, baking powder and salt. Now add dry ingredients to wet banana batter. Stir in chocolate chips.
Gently pour batter over cookie layer. Sprinkle with brown sugar. Bake @ 350º for about 25 minutes or until toothpick tester comes out clean. Let cool.

Icing Layer
I just wanted another layer:) Melted some canned chocolate frosting and drizzled on top of bars and sprinkled with leftover cookie crumbs. Put in fridge to set up.

My son is a BANANA FREAK! i have to put them in the buggy LAST at the store because he will CRY unless he can eat one! I don't like bananas plain so I'm always looking for fun ways to bake with them and I can NOT WAIT to try this!!!!

They look good! I make banana chip crumb muffins sometimes. There always seem to be bananas too soft to eat!
The cherry vanilla ice cream you asked about...I used the recipe for vanilla from the cuisinart ice cream maker and stirred in fresh cherries 5 min before it finished. Very simple!

Oh good! that is about what i figured. my kids LOVED these by the way. i ended up sprinkling cinnamon sugar on the top before i baked them, a friend of mine does that with her banana bread and i have always loved it.
