Graham Choc Chip Cookies

There are some things you just can't explain and this is one of them. I hate graham crackers, really. Don't know why but I do. Well something I've learned is that I love graham cracker crumbs added to cupcakes or baked into cookies. Weird right? Anyways...I've blended two of my favorites and this is what I came up with. Crispy on the outside and chewy on the inside. 
 2 1/4 c flour
1 tsp baking soda
1 tsp salt
2 sticks butter, softened
3/4 c sugar
3/4 c brown sugar
1 tsp vanilla extract
2 lg eggs
1 1/2 c mini chocolate chips
1/3 c crushed graham crackers (plus extra to sprinkle on tops)

Preheat oven to 375º
Combine flour, baking soda, graham crackers and salt in bowl. Beat butter, sugars and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beatinf well after each addition. gradually beat in flour mixture. Stir in chocolate chips. Drop by rounded tablespoon onto ungreased baking sheets. Sprinkle with graham cracker crumbs.
Bake for 9 to 11 minutes or until golden brown. Now cool on baking sheets for 2 minutes then remove to wire racks to cool completely.

Mickey - this could almost be a smore's cookie!!...especially if mini marshmellows were added in! ;-) I love your creations!!!
