Mini Cherry Pies

I found this cute little heart shaped pie mold at Williams Sonoma and had to get it. These would be perfect for Valentines Day but I have sweeties every day! Using refrigerated pie crust dough made this an extra easy treat. I can smell little pumpkin pies for Halloween already.

Pillsbury pie crust ( each box has 2 pie crusts )
About 2 c Cherry Pie Filling
sugar
egg wash

Preheat oven to 400º
Place dough on your work surface, using your mold cut out 5 bottoms of pies with 1 crust and 5 tops with the other crust. If you don't have a mold just use the rim of a drinking  glass to cut out circles. Filled each with about 2 tbsp of cherry filling and brush edges with egg wash. Now top with 2nd dough circle, and using fork crimp edges or fold up edges. My mold had small heart opening cut outs but you can just cut small slits in tops for steam vents. Brush pie with egg wash and sprinkle with sugar. Bake for about 22 minutes. Cool on wire rack for about 10 minutes and then dust with powdered sugar like I did.
I can't wait to fill them with chocolate!!
