Cheeseburger Mac n Cheese

Dear Big Daddy sent me this recipe, he said he found it somewhere and thought the kids would like it. Not him....the kids.....well, he tasted it when he got home and said it was so good! This was a nice hearty meal, just add a salad and some bread. ALL of the kids ate it - that in itself is amazing. Super easy too.

1bx elbow macaroni
1 lb hamburger meat
1/2 tsp salt
1/4 tsp pepper
1 tbsp Tony Chacheres' seasoning
1/4 c ketchup
2 tbsp mustard
1 tbsp unsalted butter
1 tbsp flour
1 can evaporated milk
3 c shredded cheese
1 med sized tomatoes, thinly sliced
2 tbsp seasoned bread crumbs
baking spray

Heat oven to 350º Coat a 2 qt baking dish with cooking spray and set aside. Cook pasta according to package directions, drain and set aside. Brown meat, drain and season with salt, pepper and Tony Chacheres'. Remove from heat and stir in ketchup and mustard. Transfer to bowl. Return skillet to medium heat and add butter, once it's melted, whisk in flour and add milk a little at a time. Bring to a simmer and cook about 2 minutes. Remove from heat and whisk in remaining 1/4 tsp of salt and 2 cups of cheese.
Stir in pasta and pour into prepared baking dish, add meat mixture and remaining cheese. Top with sliced tomatoes. Sprinkle with bread crumbs and spray with a little cooking spray. Sprinkle with salt and pepper.
Bake at 350º for 20 minutes, increase to broil and broil for about a minute more. I should have broiled mine longer - it was good anyways.
