French Toast Cupcakes

Alrighty! I have been having the worst luck with cupcakes lately...I wonder if my oven is trying to tell me something? Oh well, I just keep moving forward :)
How about a breakfast cupcake? You know we gotta try that one!

1 bx yellow cake mix
1 1/4 c whole milk
1/4 c veg oil
3 lg eggs
1 tbsp cinnamon

Preheat oven to 350º and line cupcake tins with paper liners. Mix cake mix, dry pudding, milk, oil, eggs and cinnamon in a large mixing bowl. Beat until smooth, about 2 minutes. Spoon batter into lined cupcake tins, filling it about 2/3 full. Bake approximately 20 - 25 minutes (mine took much longer...darn oven) until toothpick comes out clean. Remove from pan and cool completely on wire rack.

Maple Syrup Frosting
3 c powdered sugar
1 (8oz) pk cream cheese, room temp
2 tbsp Pure Maple syrup (preferably Grade B)
1/2 c Cinnamon Toast cereal (crushed)
Mix cream cheese and butter with mixer until smooth, sift powdered sugar and add to cream cheese mix. Add maple syrup and beat until smooth.
Ice cupcakes and top with crumbled cereal. Be brave and add some crumbled bacon! I'm not that brave....yet :)

You list dry pudding in the directions but it is not on the ingredients? What size would we use and kind??

I also tried to make these and couldn't d/t the lack of knowing if I need pudding mix or not?
