Cotton Candy Cupcakes

Ok guys, I have been looking high and low for this cotton candy flavoring and finally found it! I have been dying to make cotton candy cupcakes for at least a year (or more) so here they are! How fun are these!! Wouldn't they be cute for a baby shower.

1 pkg plain white cake mix
1 1/2 c blueberry yogurt (about 2-6oz cups)
1/4 c water
1/4 c veg oil
3 large egg
1/4 tsp cotton candy flavoring (found it at cake shop)
8 drops of blue food coloring

Preheat oven to 350º. Line 24 tins with paper liners. Prepare your batter by combining all ingredients in a large mixing bowl. Mix on low for 30 seconds, then scrape down sides and increase speed to medium and beat 2 more minutes. Pour into paper liners, filling each about 2/3 of the way full. Bake cupcakes 17-20 minutes until light golden. Let cool before removing to racks to cool completely.

Cotton Candy Buttercream
3 oz cotton candy (about half of bag)
4 tbsp butter at room temp
3 c powdered sugar
3 tbsp milk

Blend butter in mixing bowl or about 30 seconds until creamy, add 2 1/2 c shredded cotton candy and beat until incorporated ( The mixture will be blue and grainy). Add powdered sugar and milk, blend on low until frosting comes together and is nearly smooth, it will still be slightly grainy -increase speed to medium high and beat for 30 seconds to fluff it up.
I had 1/2 of a can of white canned frosting so I added half of it to my cotton candy frosting in the decorating bag to give it it's swirl.
Frost cooled cupcakes with buttercream and garnish with fluffs of cotton candy, I had to add sprinkle too. Just remember that cotton candy will harden when when sitting out in air, so just keep them under a cake dome or cake saver or wait to add cotton candy when you serve them.

I never even knew there was such a thing as cotton candy flavoring. How neat. Your cupcakes are so pretty and I like your ideas. Does the blueberry yogurt make the cake taste like blueberries or is it there mostly for color?

Lisa,
just for color I think.

Cotton candy in a bag?! Now, that's futuristic to me, we have to wait for the fair at Christmas time to get cotton candy!
