Millionaire Nuggets

It's Week 7 of Christmas Cookies.... humm...trying to find something new and different..these are both! Chocolate, caramel and Rice Crispies - these have it all. Perfect bite-sized pieces of Yum!
1 (14oz) pkg caramels
3 tbsp water
1/2  c chopped pecans
1 c Rice Crispies
3 c milk chocolate chips
1 1/2 tsp shortening

Line 2 baking sheets with wax paper. Grease paper with spray or butter. In heavy saucepan combine caramels and water, cook over low heat, stirring until smooth. Stir in pecans and cereal until everything is blended together. Drop by quarter sized rounds onto prepared wax paper. Using greased hands I rolled out little round balls and flatten them a little on the bottom so they could sit without rolling. refrigerate about 10 minutes until firm. Meanwhile in small saucepan melt your chips and shortening over low heat. Stir until completely smooth.
Dip your refrigerated rounds into the melted chocolate, coating all side. Place each one on baking sheets and put back in fridge until completely set. Store in airtight containers.

These remind me a lot of those Star Crunch cookies, do you know what I'm talking about? They were one of my favorites as a kid!! I'll have to give these a try, just so happens I bought a bag of caramels last week!
