Eggnog Cupcakes!

It's finally Christmas! What could be better than Eggnog at Christmas? Eggnog Cupcakes! I love eggnog and found this recipe somewhere...and....they were delicious. The whole house had a wonderful cinnamon smell . I am taking these over to Dad's for all those naughty family members :0 You know who you are.
1 bx white cake mix
1 1/3 c eggnog ( this replaces water)
1 tsp cinnamon
1 tsp nutmeg
2 tbsp rum
3 whole eggs
Mix everything, fill your cupcake liners and bake at 325º for about 16-18 minutes. Check on them, you don't want to over bake them as they will become dry. That's it. They were moist and full of eggnog taste - you could eat these without icing but, you know how I have to go over board. It's Christmas, kids will be eating these...I had to add some fluffy frosting.
Eggnog Buttercream Frosting
1/2 c butter
1/2 c shortening
4 c powdered sugar
4 tbsp eggnog
1 tbsp rum
1/2 tsp cinnamon
1/2 tsp nutmeg


Beat butter and shortening until smooth, then add powdered sugar, eggnog, rum, cinnamon and nutmeg. Beat until smooth and perfect.
Now just frost your cupcakes and sprinkle them with cinnamon or nutmeg.

My husband loves eggnog. I think we have a carton or two lurking in our fridge, now I know what to do with it!
