I saw these and thought they would be easy enough on this cold day. Warm apples and caramel....yum...store bought wrappers make this an easy one. I baked mine because I hate frying so unless someone is willing to come over and fry....mine will be baked.
I served mine with a dusting of powdered sugar and a scoop of vanilla ice-cream. Of course I had to drizzle them with caramel and chocolate sauce.
1 tbsp butter
3 c peeled and diced apples (You could use cherry pie filling for Valentines day)
1/4 c brown sugar
1/2 tsp cinnamon
5 egg roll wrappers
vegetable oil for frying (or just a little cooking spray)
confections' sugar
caramel ice cream topping (opt)
chocolate ice cream topping (opt)
In a medium size, melt butter, add apples, 1 tbsp caramel topping, brown sugar and cinnamon. Cook over medium-high heat, stirring often until apples are nice and tender. Let them cool completely - you can refrigerate them for about 20 minutes to hurry the process.
Set out egg roll wrappers and place about 2 tbsp of your apples onto your wrappers. Using your finger, wet edges of entire wrapper with water. Roll them up, pressing edges to seal. I used honey instead of water and not one of my egg rolls leaked :)
Repeat with remaining apples and wrappers.
Spray baking pan and place all wrappers on to pan. Bake at 425º for 10-15 minutes until they are golden. Remove them to paper lined plate and sprinkle them to your hearts desire. Powdered sugar, caramel topping, chocolate syrup or a big ol scoop of vanilla ice cream.
If you want to fry them
Heat oil to about 350º and add egg rolls two at a time, turning to cook all sides. When they are golden, remove them to paper towel lined plate.
