Made Dad this fantastic Carne Asada last week (forgot to take pictures :( but it was delicious) and I made this cucumber salad to go with it. Heaven.
Love this salad, it reminds me of summer. Perfect .
4 small cucumbers or 1 large one (like a big English one)
1 small red onion
1 c white vinegar
1/2 c water
3/4 c sugar
2 Tbsp chopped fresh dill
salt and pepper to taste
Bring vinegar, water and sugar to a boil, when sugar has dissolved set it aside to cool. Thinly slice cucumber and onion, add fresh dill and season with salt and pepper. Pour cooled vinegar mixture over cucumber onion mix. Stir it up and transfer it to a jar. Refrigerate jar for at least 2 hours, the longer it sits the better. They taste best ice cold right out of the fridge.
