I originally saw this recipe in a Taste of Home Cookbook but it was all cinnamon and spice. Today the sun came out for the first time in forever. Being in Texas...well, we love our sun. I was inspired to go citrus with this cookie. The cereal gave it a little crunch but they were still soft on the inside. Loved the orange and lemon.
1 1/3 c flour
1 c crushed rice crispy cereal
2 tbsp + 1/2 c sugar
3 tsp baking powder
1/2 tsp salt
1/4 c butter flavored shortening
1/2 c milk
1 tsp lemon or orange extract
2 tsp grated citrus peel
1/4 c butter, melted
Mix flour, crushed cereal, sugar, baking powder and salt in large bowl. Cut in your shortening and 1 tsp of grated citrus peel with pastry blender or fork until mixture resembles coarse crumbs. Add milk and extract - stir up until moist.
Roll dough into 1" balls - I got about 2 dozen. Line them up on cookie sheet or jelly roll pan. Bake them in a 425º for 15 minutes until toothpick comes out clean.
While they are baking, melt butter in small bowl - set aside. Now mix 1/2 c sugar and 1 tsp of citrus peel.
When your cookies have cooled for a few minutes start dipping them in butter and then the citrus sugar.
Now have yourself a bite of sunshine!
