One of Little Ones friends came over Saturday and her mother sent a carton full of fresh strawberries, a very large carton of huge berries.Wow. I have the nicest people around me :)
Now I needed to figure out what to do with them? Some I will freeze for later......these are gonna be made into something delicious right now.
So I let Little One decide and she chose...ice cream! A girl after my own heart.
We used a David Lebovitz recipe for the white chocolate ice cream and just added my sweet berries to it. I couldn't leave it at that....I added mini choc chips too.
8 oz white chocolate, finely chopped
1 c whole milk
2/3 c sugar
pinch of salt
5 large egg yolks
2 c heavy cream
1 tsp vanilla extract
2 c strawberries, finely chopped
Put chopped chocolate in a large bowl and set a mesh strainer on top of bowl - set aside.
Warm milk, sugar and salt in a medium saucepan. In another bowl whisk together egg yolks. Slowly pour warm milk into egg yolks, whisking constantly until blended. Now pour everything back into saucepan. Stir this mixture over med-heat, keep stirring, scraping bottom and sides the whole time. When the mixture starts to thicken and coats your wooden spoon, take it off the heat. Pour the custard through the strainer over white chocolate. Stir until chocolate is completely melted and everything is smooth. Now stir in cream and vanilla. Stir until cooled, over an ice bath.
Chill mix in refrigerator, then freeze in your ice cream maker according to machines instructions. About 5 minutes before cycle is complete, add your strawberries and chips. Totally worth that extra walk :)
