Cookie Cups

Saw these and had to make them. They were so cute for Mother's Day, but would be perfect for a brunch or kid them up with choc chip cookie dough and top them with chips or m&m's. Super easy AND good.
2 pkg break and bake frozen sugar cookie dough
1 sm tub (8oz) Whip Cream
1 (8oz)cream cheese, softened
1/4 c powdered sugar
1 tsp vanilla
chopped strawberries and blueberries
Spray muffin tins with cooking spray and set aside. Break up cookie dough and place one piece into each muffin tin and bake until almost done. Just take a minute off of whatever your package recommends. You want them to be soft enough to be able to press centers down. When they have finished in the oven, take them out and quickly press each ones middle with whatever works. I don't have a tart shaper so I used the end of a rolling pin. Hey it worked :) Let them cool for a few minutes in muffin pan then transfer to wire rack to cool completely.
While they are cooling make your filling. In a mixer on med-high, combine cream cheese, cool whip, vanilla extract, adding powdered sugar slowly until everything is incorporated.
Now just pipe filling into each cookie cup and top with chopped up fruit. They were really good.....the cream cheese....fruit.... and sugar cookie...perfect together.

Wow! These sound fantastic! Sugar cookies filled with anything is good in my book but add cream cheese? Youza. I 'm all over it!
