Found this cool idea and recipe over at Smile Monsters. Jo has a great blog over there - full of fun :)
Root Beer Layer
1 (12oz) root beer or 1 1/2 c
1/2 c sweetened condensed milk
Cream Layer
1/3 c whole milk
1 tbsp sweetened condensed milk
1/4 tsp vanilla
Blend root beer and condensed milk together with a whisk. If you have too many bubbles, just set it in the refrigerator to flatten a bit. Pour your first layer of root beer in cup and place in freezer to set up for about an hour. Make cream layer and pour in even layer over root beer layer and freeze again. Finish with root beer layer and freeze for another hour - insert sticks after the top layer has gotten a little firm. I just used small plastic dixie cups and wooden craft sticks. Patience my dears...as you can see I hurried mine along and they didn't come out as pretty as Jo's ..... but they were still cute and good too. Go check out her other popsicle ideas, she even has a coconut cream popsicle recipe that is next on my list.
