Lemon Squares

I know I've made something like this before called the Eclair Dessert - just shows you how versatile this baby is. Changing the filling and topping... well...it changed it :) Anyways, it is so sweet looking and crisp and cool - perfect for this HOT weather. I bet blueberries and cream would be good too...how about peaches n cream....I could go on forever but you get the idea.
1 can of sweetened condensed milk
12 graham crackers
1/2 c lemon juice
1 tsp grated lemon rind
Layer a 9x9" pan with graham crackers. Mix sweetened condensed milk with lemon juice and grated lemon, stir until completely incorporated. Pour half of mix mix over graham crackers. Repeat, ending with graham crackers. Top with lemon icing.
Refrigerate overnight.
Lemon Icing
1/4 c butter, soft
1 c confectioners sugar
1-2 tsp lemon juice (to taste)
1-2 c confectioners sugar
1-2 tbsp milk
Cream 1/4 c of butter with 1 cup of confectioners sugar. Gradually beat in 1-2 tsp lemon juice (to taste). Beat in remaining confectioners sugar, slowly add milk until you reach desired consistency. I added a few drops of yellow food coloring to make it smile ;)
