White Biscotti Cake Bars

While looking around for a good recipe to take down to the beach, I came across this one. I loved the whole idea! Cake mix, condensed milk, marshmallows, white chocolate, and graham crackers.....Whoa....Wouldn't you know it...I didn't have graham crackers...I did have biscotti cookies? Well I used them in place and they turned out fine, great in fact. So use either, whatever you have...I bet Oreos would work too :)
1 box yellow cake mix
1 lg egg
 1 stick of unsalted butter (soft)
4 -6 whole graham crackers (I used Biscotti Cookies)
10 oz bag of white chocolate chips
2 c mini marshmallows
1/2 c sweetened condensed milk
Preheat oven to 350º and line an 8x8" baking pan with foil( I used a 13x5" pan and it worked)- make sure it goes up sides and hangs over edges. Everything rises a bit :) Now generously coat foil with cooking spray.
Place cake mix, egg, and soft butter into mixing bowl - using your hands mix until you get a dough like consistency. Kinda like cookie dough would be.
Divide your dough and press half into bottom of the prepared pan (I sprayed my hands to make it easier). Now layer your graham crackers (or cookies ) directly on cake dough, then add chocolate chips, and the marshmallows. This is the tricky part - top all of this with the remaining cake dough. Spray your hands and press as evenly as you can - don't worry it doesn't have to be perfect. It will smooth out a bit and everything will come together.
Drizzle condensed milk over the entire thing and bake for 28-33 minutes until it's cooked through and top is a golden brown.
Remove from oven and let cool about 5 minutes. Run a plastic knife along edges so it's easier to remove. Cool completely and remove foil. Cut into squares and eat! Serve at room temp or chilled. It's super hot here so we of course chilled them.

Wow, this is such an interesting recipe!!! I saw it featured on Jam Hands and it looked so much like Gooey Butter Cake, I had to check it out. Sure enough, the base layer is the same but with different filling and a different way of layering--wow, I love it! And I happen to have crushed graham crackers on hand so hopefully I'll get to try this. I'm baking for the fair right now but maybe after this week. Thanks for sharing!
