Sweet Potatoes with Candied Topping

We have a restaurant here in the neighborhood that does sweet potatoes with a yummy topping so I knew I had to try these. I added the quick oatmeal to the original recipe just like our restaurant makes..... Yumm, just what it needed. If you need to double the topping, go ahead I won't tell. It's that good.
Perfect for Christmas dinner too.
4 c mashed sweet potatoes (2 lg cans)
1 c sugar
1 stick softened or melted butter (I melted mine)
2 eggs, beaten
1/2 can Sweetened Condensed Milk
1 tsp vanilla
Topping:
1 c brown sugar
1 c sweetened coconut flakes
1 stick butter (melted)
1/2 c quick oats
Mix together potatoes, sugar, butter, eggs, sweetened milk and vanilla. Mash everything together until you get the consistency  you want (some like it a little chunky). Spread it into a 9x13" pan. Make your topping.
Topping:
Combine brown sugar, coconut and melted butter, mix it all up and sprinkle it over the entire pan. Bake 350º for 40-50 minutes or until your topping is a nice golden brown.

Oooh, coconut flakes on top sounds like a great idea. What a wonderful way to dress up sweet potatoes.
