Soft Molasses Cookies

Feels like summer around here these days - kinda feel strange making molasses cookies when it's so warm but I have been wanting to make them and finally found a nice spicy one to try :)
1/2 c soft butter
1/2 c veg shortening
1  1/2 c sugar
1/2 c molasses
2 whole eggs, beaten
2 tsp vanilla
4 c flour
2  1/4 tsp baking soda
2 1/4 tsp ground ginger
1 1/2 tsp cinnamon
1 1/2 tsp cloves
extra sugar for rolling cookie dough
In large bowl, cream butter and shortenening. Add sugar and beat until light and fluffy. Beat in molasses, eggs, and vanilla. Set mix aside.
In another large bowl combine flour, baking soda, and spices. Whisk until blended. Gradually mix flour mix into creamed mix until dough is smooth and blended.
Using a tbsp scoop, measure out dough to roll into balls. Drop them into sugar to cover completely. Place them on ungreased cookie sheet, about 2"-3" apart.
Bake 350º for 11 min or so, cool for a minute and let cooled completely on wire racks or lightly press each cookie with the back of your spatula to remove any excess air (this will help them stay chewy and moist) and then remove to your racks. You should come out with around 3-4 dz cookies depending on how big you roll them out to. These were good, perfect combination of spices.
