Saganaki Shrimp (Greek Shrimp)

My trip to Greece left my head filled with flavors. We had the most wonderful lunch made for us on our trip around the islands by Teddy. I looked everywhere for anything that resembled the dish and lo and behold...I found the exact recipe (here at Food Network - Saganaki Shrimp) that Captain Ted uses for the trip. Yeah!
1 tbsp olive oil
1/2 c onions (minced)
2 garlic cloves (minced)
1/2 tsp crushed red pepper flakes
1 tbsp tomato paste
3 medium tomatoes, peeled, pureed and strained
2 tbsp mastic liqueur or you can substitute ouzo or white wine
1 tsp sugar
salt (to taste)
black pepper (to taste)
1/2 lb fresh shrimp - peeled and cleaned (I removed tails too)
1 tbsp fresh oregano (chopped)
2 tbsp fresh parsley (chopped)
3 oz feta cheese
Preheat oven to 400º
In a small pan, heat your olive oil. Add chopped onions and saute them until they are translucent. Stir in garlic and red pepper flakes -  saute them for a minute more.
Pop in your tomato paste , purred tomatoes, mastic liqueur, sugar, salt and pepper. Cook over medium heat for around 5-7 minutes or until sauce thickens. Next add shrimp and cook about 1 minute then flip over and cook the other side another minute. Stir in 1 tbsp of parsley and oregano. Remove from heat and transfer to a baking dish, Sprinkle with feta and bake for about 10 minutes - until cheese is bubbly. Sprinkle with parsley.
