S'mores Bars

Camp is over and school starts Monday down here so I knew this would be the last S'more recipe for me this summer. I found tons of cookie recipes with this and that, this exact recipe is everywhere. I liked this "style" the best.
11 tbsp unsalted butter, softened
1 c brown sugar, packed
2 lg eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
2 1/2 c flour
1/2 c semi-sweet choc chips
1 c mini marshmallows
3 Hershey bars, broken up into pieces
 graham cracker squares
In a medium bowl, whisk together flour, baking soda, sea salt and cinnamon to combine. Set aside.
In another bowl cream butter with white and brown sugar until light and fluffy. Add eggs and vanilla and mix until combined.
On low speed add flour mix to butter mix and combine.
Fold in choc chips and marshmallows, chill dough for at least an hour or overnight.
Preheat oven to 375º. Line baking pans with parchment paper - now lay out graham crackers side by side. You may have to add or remove graham crackers according to how much dough you have.
Place tbsp of dough on crackers about 1- 1 1/2" apart. Press down slightly with fingertips.
Bake for 5 minutes then remove from oven, press Hershey bar piece on top. You can place as many or as little as you like.
Bake 5-7 more minutes or until dough is begining to turn golden brown at edges. Remove to a wire rack to cool. For clean cutting make sure cookies are completely cool and cut with sharp knife.
They were a ooey gooey mess :)
