Spinach & Cheese Strata

Made this Strata for Father's Day, it was as good as it looks. Easy to throw together and as you can see was a hit. You make it the night before and just throw into the oven about an hour before guest arrive.
3 tbsp unsalted butter
1 1/2 c onion, finely chopped (optional)
2 (10oz) packages of frozen chopped spinach (thaw and drain)
1 tsp salt (divided)
1/2 tsp pepper (divided)
dash of  grated nutmeg
8 c French or Italian bread, cut into 1" cubes
2 c grated Gruyere cheese
2/3 c grated Parmesan cheese
9 lg eggs
1/2 tsp Dijon mustard
2 3/4 c milk
Melt butter in pan over medium heat. Add onions and saute until soft - about 5 minutes. Add 1/2 tsp salt, 1/4 tsp pepper and nutmeg. Cook for about 1 minute more then stir in spinach, remove from heat and set aside.
Butter the inside of your 3 qt baking dish. Layer the bottom with 1/3 of bread cubes. Top with 1/3 of spinach mix, then 1/3 of each of the cheeses. Repeat until done. In medium bowl, whisk eggs, milk, and remaining 1/2 tsp of salt and 1/4 tsp of pepper until blended. Pour evenly over the bread mix.
Cover with plastic wrap and chill for at least 8 hours or up to one day.
Remove from fridge 30 minutes before baking. Preheat the oven 350º. Bake uncovered until puffed, golden and cooked thoroughly- about 55 to 60 minutes. Let stand at least 5 minutes before serving.

This looks so good! I just prepared some to have tomorrow morning. I halved the recipe since there is only two people who are going to be eating it and I used feta cheese since its all I had lying around. Thanks so much for giving me something new to try for breakfast:)
