1/2 pound (2 sticks) butter, softened
1 c firmly packed brown sugar
1/2 c granulated sugar
1 1/2 c flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt (optional)
3 c quick oats
1 c choc chips or butterscotch chips
Heat oven to 350*.
Beat together butter and sugars until creamy, add eggs, vanilla and beat well. Combine flour, oats,baking soda, cinnamon and salt and add to egg mixture - mix well. Stir in choc chips and mix in.
Drop by rounded tablespoons onto ungreased cookie sheets. Bake 10- 12 min until golden. Cool about 1 min before moving to wire rack. Makes about 2 dozen.
