Fish Tacos


I have never eaten fish tacos ever! They just didn't sound right to me but my girl Lisa passed these on to me and I decided to finally try them. They sounded so fresh and light and they didn't disappoint this family.






1/2 C sour cream
1/4 C favorite salsa
salt & pepper
favorite seasonings ( I used Tony Chachere's seasoning)
3 cod fillets - 8oz each
2 T virgin olive oil
Juice of 2 fresh limes
1 small red onion ( diced )
2 ripe tomatos (diced )
ice berg lettuce, finely chopped
shredded mexican mixed cheese
chopped fresh cilantro leaves (optional)

 Preheat oven to 300.  Stack and wrap tortillas in aluminum foil and warm in oven while preparing fish. Whisk together sour cream and salsa in a small bowl; season with salt and pepper. Cover and put in fridge. Heat grill or non-stick pan over high heat.  Brush fish with oil and season with salt and pepper and your favorite seasonings (I just sprinkled it on both sides of fish). Cook fish until golden brown on both sides - about 4 minutes per side.  Remove to a plate; drizzle with the lime juice.  Let rest for 5 minutes.  Using a fork flake the fish into large pieces. Set up a taco bar with all ingredients and go to town! We used flour and corn - those who eat fish in this house loved them!

Remember to season, season, season! You can omit sour cream and just use your favorite salsa.
