Pork Chop Casserole

I know what you're thinking...ugh. It's not a pretty dish (neither is my picture) but this was really good. My neighbor talked about making this for her Scouts and I wanted to try it out. It will feed a large family and it's a real hearty meal. A mans meal. No joke...EVERY ONE in this house ate it. That's the proof - that doesn't happen often.







1 Lg bag of frozen tater tots
1 can cream of mushroom soup
2 c sour cream
1Tbsp olive oil
1 jar of sliced mushrooms (opt) -drain
1/2 sm chopped onion (I cut them up large so kids can pick out)
2 can green beans - drain
8 boneless pork chops (I used thin sliced ones)

Heat oven to 350*, spray 13x9" baking pan with non-stick spray. Lay single layer of your tater tots down. Season with salt and pepper. Place green beans over tater tots and set aside.
Heat oil in pan, add onions and mushrooms. Saute for about 5 min. Add your pork chops and brown them on all sides. Remove pork chops and lay them over green beans.
Add soup and sour cream to your pan that has mushrooms and onions, stir until blended and warmed. Pour evenly over pork chop mix. Cover casserole with foil and bake 30 minutes. Remove foil and bake 15 min longer.

Sounds like some good family food. Easy and fast with many options to add or take away for picky eaters.
