We buy these at our neighborhood grocery store every week so I wanted to make them fresh at home (they cost about $6 for a dozen at the store) They were really good and same texture as store bought- they are kind of muffin like. Nothing makes the house smell like fall like pumpkin in your oven. Yum!
Pumpkin Choc Chip Cookies
1c (2 sticks) unsalted butter-softened
1c granulated sugar
1c brown sugar
2 lg eggs
1 tsp vanilla
1 can pure pumpkin
3c flour
2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
2c choc chips
Non stick cooking spray
Heat oven to 350* Spray baking sheet and set aside.
With your mixer beat butter until smooth, add sugars a little a at a time until mixture is light and fluffy. Beat in the eggs one at a time, then add vanilla and pumpkin.
In a separate bowl whisk flour, baking soda, salt and spices - slowly add flour mix to your pumpkin batter. Finally stir in chocolate chips.
Scoop by heaping teaspoons onto prepared cookie sheet ( I did heaping Tbsp but they did get BIG), bake 15-20 min or until brown around edges.
Remove from oven and let rest for about 2 min, transfer to completely cool on wire racks.
Cook time: 15 min
Makes about 60 cookies
