I haven't wanted to start Christmas stuff so soon but I saw the Hershey's Peppermint Kisses and had to make these. They were good, kinda like a tea cake texture. I think I liked them smaller sized. I'm going to serve them with a cup of hot cocoa when the kids get home from school today. It's Friday! Yeah!!
1c butter, softened
1 c powdered sugar
1 1/2 tsp peppermint extract
2 egg yolks
16 drops of food coloring (I used pink)
2 1/4 c flour
2 1/4 c flour
1/2 tsp baking powder
1/4 tsp salt
24 Hershey's Peppermint Kisses
Makes about 24 cookies,depending on your size. I made big ones and little one too.
Heat oven to 350*. Line cookie sheets with parchment paper. In a large bowl beat 1 c soft butter with powdered sugar on medium speed until light and fluffy. Beat in peppermint extract, egg yolks, and food coloring until blended. On low speed add in flour, baking powder and salt. Shape dough into 1" balls and place them about 2 inches apart on prepared cookie sheets. Bake 10 to 12 minutes or until set. Remove to rack to cool for 1 minute, while still warm place Peppermint Kiss to top. Using a knife, spread on warm cookie - let cool completely. I threw mine in the refrigerator to set the chocolate up a little.
