Pumpkin Eyeballs Recipe!

Some of you requested the recipe for those yummy Pumpkin Eyeballs. Here it is - the variations for this dessert are endless.


1 box pumpkin bread mix (cook as directed on box for 13 X 9 cake)
1 can cream cheese frosting (16 oz.)

1 package chocolate bark (for dipping)
white chocolate chips (to drizzle over tops)
semi-sweet chocolate chips (to drizzle over tops) 
1/2 c pecans
Sprinkles to make pupils
Make bread according to box directions. After bread is cooked and cooled completely, crumble into large bowl. (The texture should be fine/fluffy ) I used my hands to break it up. Using the back of a large spoon, mix thoroughly with 1 can cream cheese frosting. (I also used my hands for this, but be warned it will get messy.) Roll mixture into quarter size balls  and lay on wax paper covered cookie sheet. Chill in the freezer for a few minutes, until they are slightly firm, not frozen. Melt chocolate bark in microwave per directions on package. Now using  two forks, dip eyeballs into melted chocolate bark. Roll around until covered. Set aside on wax paper to set. Melt white chocolate and semi-sweet chips to drizzle and decorate with sprinkles to make eyes.
