Pumpkin Spice Cupcakes

I made these just to try out a maple frosting. Thankfully you can now buy boxed cake mix that only makes 8- 10 cupcakes. I made 8 big ones. A really good combination :)


1 box of yellow cake mix
1 (3.4oz) instant butterscotch pudding mix
4 eggs
1/4 c water
1/4 c vegetable oil
1 c canned pumpkin
2 tsp pumpkin spice

1 tsp maple extract
1 tsp maple syrup
1 can vanilla frosting

In large bowl mix together all ingredients, with mixer beat on low for 30 seconds or so then increase speed to high and continue to beat for another 4 minutes. Pour into a tin that has been lined with paper liners.Bake at 350 for 20-22 minutes or until toothpick comes out with just a few crumbs.Let sit for a few minutes then turn out to cooling rack.
I  just pricked tops with toothpick and brushed on some maple syrup, then I let them cool completely. I frosted them with store bought vanilla in a can, just mix in 1 tsp Maple extract and 1 tsp of Maple syrup. It gives it a little flavor without going overboard.
