Sugar Donut Cupcakes

Don't they sound yummy! Well I missed last Girl's Monday because the house was sick but, we are on the mend. When I saw these I imagined they would be warm and sweet and really good - they were Divine!! The whole house smelled like heaven! I made a batch for the girls - I even used pink sugar. They were so easy to make that I quickly whipped up another batch for the house.

3/4 c sugar
1 Lg egg
1 1/2 c flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 c vegetable oil
1 tsp vanilla
3/4 c milk
2 Tbsp melted butter (for dipping)
1/2 c sugar (for rolling cupcake in)
1 Tbsp cinnamon (for rolling cupcake in)
Makes 24 mini-cupcakes or 12 regular cupcakes

Preheat oven to 350* and grease muffin tins or use liners like I did. In a mixing bowl beat together sugar and egg until light and fluffy. In another bowl blend flour, baking powder, salt, and nutmeg. Pour into sugar egg mixture and blend until combined. Add vegetable oil, milk, and vanilla extract. Mix it all together. Pour into cupcake tins - fill them about 3/4 full. Bake for about 15 minutes - done when toothpick tester comes out clean. Let them cool a few minutes. While waiting, melt butter in microwave and set aside. In another bowl mix your cinnamon and sugar. As soon as you can touch them, dip the tops into the butter (I used a pastry brush and brushed the butter on) and then roll tops in your cinnamon-sugar mix. They really were so easy AND so good!
