Spinach Madelaine

This is the second time I've been asked to make this.Other side of the family usually makes it but I knew my side of the family would love it! As always I can't leave well enough alone, I just added Gruyere cheese to change it up. I really love it this way.

2 pkg frozen chopped spinach
4 Tbsp butter
2 Tbsp flour
2 Tbsp chopped onion (opt)
1/2 c evaporated milk
1/4 tsp salt
1 tsp Worcestershire sauce
1/2 c reserved spinach juice
3/4 tsp celery salt
3/4 tsp garlic salt
1/2 sm Velvetta cheese block (spicy flavor)
1 1/2 c Gruyere cheese
red peper to taste
buttered bread crumbs or crushed up croutons



Cook spinach, drain and reserve juice. Set aside. In another saucepan melt butter on low heat. Add flour, stirring until blended and smooth but not brown. Add evaporated milk, Worcestershire, and reserved 1/2 c spinach juice, stirring constantly to avoid lumps. Cook until smooth. Add seasonings and cheeses - stir until melted. Combine with spinach and top with bread crumbs. Bake at 350* for 30 minutes.
