Chorizo Breakfast Casserole

I love breakfast casserole's but this was actually my first try at making one myself. It calls for chorizo but I used regular hamburger meat. You can use whatever your family loves, make it as spicy or cheesy as you want. I made this casserole to take over to Dad's today. He had two servings, I think he liked it :)




4 links Mexican Chorizo (or a lb of hamburger)
1/2 c chicken broth
1 1/2 tbsp olive oil
1 small onion, chopped up
1/2 green bell pepper, chopped up
1/2 can spicy chopped tomatoes
1/2 c tomato sauce
10 slices of crusty bread cut into chunks
4 large eggs
1 1/2 c milk
1 c chicken stock
salt and pepper
1 tbsp Tony Chacheres' seasoning
2 c mexican blend cheese
1/2 parmesan cheese
1/2 c pepper jack cheese, chopped up
1 tbsp of chopped cilantro or parsley

Preheat oven to 400º and grease casserole pan. Heat oil in pan and saute onion pepper mix. When onions are translucent and browning add chorizo and 1/2 c chicken broth ,tomatoes and tomato sauce. Simmer for 20-30 minutes until chorizo is cooked through and liquid has been absorbed. Add bread pieces and toss to coat. Pour 1/2 into casserole dish. Sprinkle with 1/2 cheese add the rest of bread mix then cover with more cheese.Set aside.
Whisk eggs, milk, salt, pepper, seasonings and 1 cup of stock together and pour over casserole, making sure it is all coated. Sprinkle with Parmesan cheese and bake 30-40 minutes until set and golden brown. sprinkle with cilantro and more cheese.
