I was trying to find something to make for dinner that was slightly healthy for you...maybe healthier...ok maybe it just looks healthy. Thawed some shrimp for dinner and decided to try to make something spicy with them. Thought these would go great over rice or even better, lay them out on a bed of greens. It hit the spot!
1 lb shrimp (thaw,peel and devein)
1 tsp butter
1 tsp chopped garlic
1 tsp onion powder
1 tsp lemon juice
1 tsp Tony Chachere's Spice Seasoning
1 tsp Tony Chachere's Spice Seasoning
1/2 chopped red bell pepper
s+p to taste
fresh chopped parsley
bag mixed greens
sprinkle with Light Raspberry Vinaigrette
Sprinkle shrimp with lemon juice - set aside. Melt butter, then add shrimp, garlic, onion powder,spices and red pepper. Saute until shrimp are pink and done. Season with salt, pepper and parsley. As always season to taste, some people don't like it as spicy as others - this was not too spicy but had a little kick. Set out greens and top with Pepper Shrimp, I added the vinaigrette to give it a little sweetness and cool down that spice. Add croutons, parmesan cheese or even some veggies that you like on your salad.
