Pork Chopped Cabbage

This is not really a recipe but something I just threw together - sometimes that's what they get :)  It's one of those dishes that you can change around to your liking.

1 whole cabbage (shredded)
1 large tomato (sliced)
1/2 small onion (sliced)
1 tsp minced garlic
1 carton of chicken stock
6 breakfast pork chops (thin ones)
1 tbsp salt pork (chopped tiny)
salt and pepper


In a skillet, heat up some oil. Fry garlic,onion, and pork salt until aromatic and pork is cooked. Throw in cabbage and tomatoes. Fry until they soften (over a medium flame). Add chicken stock and allow veggies to simmer until completely cooked. I baked these breakfast chops in the oven until done then tossed then into pan to finish it off. Taste and add whatever seasonings you like. I served with glazed brown sugar carrots.
