Strawberry Angel Filled Cupcake

I wanted to go light, springy and easy of course. Angel Food Cake and strawberries - always a hit right? Just added a little vanilla flavor and filled them up with vanilla custard. These would be a perfect ending to any meal or the beginning of one :)
Cake

1 bx angel food cake mix (I used Duncan Hines Angel Food Premium Cake Mix)
2 tsp vanilla bean paste (or 2 tsp vanilla extract)

Vanilla Bean Custard
2 1/2 c milk
3/4 c sugar
1/3 c flour
2 egg yolks
2 tsp vanilla bean paste (or 2 tsp vanilla extract)
Whisk together first 4 ingredients in heavy 3-qt saucepan. Cook over med-heat, whisking constantly, 10-12 minutes or until thickened. Remove from heat, stir in vanilla bean paste. Cover and chill about 3 hours.



Strawberries
3 c halved fresh strawberries
1 Tbsp sugar 
1 tsp vanilla
Mix everything until blended and refrigerate until you put cupcakes together.



Prepare vanilla custard and set aside in refrigerator to chill - about 3 hours. Preheat oven to 325º. Spray and flour your cupcake tins. Prepare angel cake batter according to directions using a paddle attachment. Stir in vanilla bean paste. Spoon batter into baking cups, filling completely full.
Bake at 325º on middle rack for 20-25 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire racks about 10 minutes.
Gently run knife around edges of cupcakes to loosen. Remove from pans to wire racks and cool completely (about 20 minutes).
Scoop out centers, leaving a 1/2" border on bottom and sides. Spoon or pipe chilled Vanilla Bean Custard into centers of cupcakes. Top with strawberries, cover and chill until ready to serve. Garnish with mint leaves.

These are amazing! Did you put the batter directly into the muffin pan or did you use paper liners? This will be wonderful to put together during strawberry season!
there's also nothing like whipping up a fresh angel food cake mix! I prefer them so much better than store bought {which I do use in a pinch}

We had strawberry crepes again last night. My son and his girlfriend came over so I made some for them.
They loved it!!
Did you see where I left a link to a recipe for making crepes from one of my other blogger friends on Wed. post I think it was, it is all the way a the bottom.
Oh, and the book "7 things that steal your joy is great" I am about 4 chapters in, gotta get back to it today. All of her books are good, she has written a ton of books actually.

Yummy YUM yum! I'll definitely be making this recipe! Where did you get your "vanilla paste"? I've never used that before....I'm going to have to try and find some. :-)

Found it at Trader Joe's -It's $5 for a 4 ounce jar, It's not really a substitute for real vanilla beans but a nice alternative to vanilla extract, especially when you want the flecks to show in a custard or ice-cream. I've made this custard with regular vanilla extract and had the same results.
